Two different reasons to scale a recipe

Most recipe-scaling advice assumes you're feeding more or fewer people, which is a straightforward ratio of servings. Cast-iron cooking adds a second, less obvious case: a recipe written for “a 10-inch skillet” is really describing how much food fills that pan’s surface, not a headcount at all. Move it to a 12-inch pan and the honest scaling factor is the ratio of the two pans’ areas, not a servings guess.

Because a circle’s area grows with the square of its radius, that pan-size ratio can be surprisingly large or small — going from a 12-inch skillet down to an 8-inch one shrinks the usable surface to under half, even though the diameter only dropped by a third.

What's the difference between the two scaling modes?

Servings mode is the classic approach: multiply every ingredient by desired servings divided by original servings. Skillet-size mode is specific to pan-based cooking — it scales by the change in cooking-surface area between the recipe's original pan and yours, which matters when a recipe is really written around 'fill this size of skillet' rather than a headcount.

Why does area scale with diameter squared instead of diameter?

A circle's area is pi times its radius squared, so doubling a skillet's diameter doesn't double its cooking surface — it roughly quadruples it. Scaling ingredients by diameter alone would badly undershoot how much more a bigger pan can actually hold.

Why round to the nearest eighth?

Standard kitchen measuring cups and spoons step in eighths (1/8 cup, 1/8 teaspoon, and so on), so a scaled amount like 1.44 cups is more useful rounded to a measurable 1 1/2 cups than left as an unmeasurable decimal.

Should I scale cook time the same way as the ingredients?

Not directly — a thinner layer of food in a bigger pan often cooks a bit faster, while a thicker layer in a smaller pan can take longer, and neither follows the same area ratio as the ingredients. Treat the calculator's output as your scaled ingredient list, and check for doneness by sight, smell, and temperature rather than the clock alone.
