Baking below the smoke point, on purpose

Every seasoning oil has a smoke point — the temperature where it stops behaving like a liquid fat and starts breaking down into smoke. Seasoning wants the oil hot enough to cross-link into a hard, glassy polymer, but staying a step under that smoke point keeps the process controlled instead of setting off your kitchen’s smoke alarm.

The calculator floors your oil’s smoke point down to the nearest 25°F step below it, then keeps the result inside a 400-500°F band that covers what a typical home oven and a typical seasoning oil can handle safely.

Why does the oven temperature depend on the oil's smoke point?

Seasoning needs the oil to polymerize into a hard layer, not simply burn off. Going past an oil's smoke point breaks it down into smoke and free fatty acids instead of a bonded film, so the calculator picks a temperature a step below the smoke point — hot enough to polymerize, not hot enough to smoke the kitchen out.

Why is there a 400°F floor even for low-smoke-point oils like butter?

Below roughly 400°F, most seasoning oils polymerize too slowly to form a durable bond in a reasonable time, leaving a soft, easily-stripped layer. If your oil's smoke point is too low to clear that floor safely, a higher-smoke-point oil (canola, grapeseed, or a refined vegetable blend) will season more reliably.

Why an extra hour of cool-down after baking?

Pulling a hot pan straight from the oven and letting it cool quickly on a rack can cause the new layer to craze or flake before it's fully set. Cooling in the switched-off oven lets the layer finish curing slowly and evenly.

Do I really need multiple coats?

Yes — one thin coat is rarely durable on its own. Building up two to four thin layers, each baked and cooled before the next, is what gives cast iron its smooth, dark, stick-resistant surface rather than a single fragile film.
