Why pan size and servings aren’t a straight line

It’s tempting to think a 12-inch skillet just feeds “a bit more” than a 10-inch one, but the cooking surface itself grows by the square of the radius, not the diameter. That’s why jumping from an 8-inch to a 12-inch pan more than doubles how many servings it can realistically hold, even though the diameter only grew by half.
