How the oven temperature is derived
Seasoning isn’t just baking oil onto iron — it’s pushing the oil past being a liquid fat and into a hard, plastic-like polymer bonded to the metal. That reaction needs real heat, but too much heat burns the oil into smoke and loose carbon instead of a bonded film. The calculator handles that tradeoff by flooring each oil’s smoke point down to the nearest 25°F step, backing off another 25°F below that, and then clamping the result to a 400-500°F band — a range chosen because seasoning oils polymerize too slowly below 400°F and most kitchen ovens and oils get unreliable above 500°F.
That’s why the table above isn’t a straight line from smoke point to oven temperature. Flaxseed (225°F), butter and virgin coconut oil (350°F), and grapeseed (420°F) all land on the same 400°F floor, because the arithmetic would otherwise put them below it. Canola and vegetable/blended oil, both close to 450-460°F, land on 425°F. Refined avocado oil, the highest smoke point of the group at 520°F, is the only one that clears the floor by enough to land above it, at 475°F.
Polymerization behavior is a separate axis from smoke point, and the two don’t always move together. Flaxseed has by far the lowest smoke point here but the most reactive polymerization, which is exactly why it’s notorious for flaking — it hardens fast and unforgivingly, so a coat that’s even slightly too thick sets as a brittle shell instead of a flexible film. Butter and coconut oil sit at a moderate smoke point but never fully polymerize into a hard layer at all, because saturated fat doesn’t cross-link the way polyunsaturated fat does. Canola, vegetable blends, grapeseed, and avocado oil occupy the practical middle ground most seasoning guidance actually recommends: a moderate, forgiving cure with a smoke point comfortably above the oven temperature the calculator lands on.

Why does the oven temperature in this table not match the oil's smoke point?
Seasoning wants the oil hot enough to polymerize into a hard film, not hot enough to smoke. Every oven temperature here comes from the same seasoningSchedule() function the calculator uses: it floors the smoke point to the nearest 25°F step, steps back 25°F below that, and then keeps the result inside a 400-500°F band, so the pan never bakes right at the edge of the oil breaking down.
Why do four different oils all land on the same 400°F oven temperature?
400°F is the calculator's floor — the lowest oven temperature it will ever recommend, because seasoning oils polymerize too slowly below it to bond well in a reasonable bake time. Flaxseed, butter, virgin coconut oil, and grapeseed all have smoke points low enough (or, for grapeseed, close enough) that the math would otherwise suggest a cooler oven than that floor allows, so all four get clamped up to 400°F.
What does "drying", "semi-drying", and "non-drying" mean for an oil?
It describes how readily an oil's fat molecules cross-link into a solid film when heated. Drying oils (high in polyunsaturated fat, like flaxseed) polymerize fastest and hardest, but flake if applied too thick. Semi-drying oils (canola, grapeseed, vegetable blends, refined avocado) cross-link at a moderate, more forgiving rate. Non-drying fats (butter, coconut oil) are mostly saturated and never fully harden into a durable film on their own — they season, but softer and less durably.
Should I just always pick the highest smoke-point oil?
Not necessarily. A higher smoke point buys headroom against smoking out the kitchen and lets the oven run a little hotter, but it doesn't automatically make a harder or more durable seasoning layer — that depends more on the oil's fatty-acid makeup (its polymerization behavior) and on applying a genuinely thin coat than on the smoke point alone.
Smoke points vary by brand, refinement, and age of the oil — treat these as practical starting points, not lab-verified figures for any specific bottle.
